Accountability ~ Day 75?? I missed a few days

Not even sure where I messed it all up - besides knowing that I haven't been writing I also know that I messed up my days... I have 15 days left of my "journey" so I guess that means this is day 75.

I have been fighting a bit of a cold lately - and that might have messed up my energy a bit. I think life has just happened a bit lately and things have gotten a bit off. The GOOD news is is that even though I haven't been following the program and the DVDs exactly I know I haven't been missing workouts - just not following the program exactly. (subbing this for that, etc - I guess I wanted some variety)

I only have 15 days left of workouts and work (not counting today) and this week has been a bit weird...
~fighting a cold
~busy day off (photo shoot canceled due to wet mud)
~ stood up by my friend for lunch - no big deal but could have gotten some more things done if I didn't wait for him
~ Had a rough night with a friend of mine who projected a lot of her unhappiness onto me and I let it happen.
~ Feeling overwhelmed with everything I need to get rid of and not knowing...

But lets see what I can remember - my 30 days of no cookies no cakes no sweets no treats were up and since there was no photo shoot i didn't push it to Feb 3rd. I am glad I did it, I learned, and know that I CAN and that it isn't that big of a deal to not have them. There was maybe only 4-5 tough days - but I managed through them. I plan on keeping a closer eye on my cookie intake from now on :)

Tuesday: I made Vegan cookies - still not as good as Red Velvet - but tasty.
Wed: Had my cheat day - blueberry muffins, vegan chocolate chip cookies
thursday: had cookies left over so had them, was also give some clif bars - need to get rid of those.

Other than that, my eating has been clean - not too many other cheats as mostly have fruit, veggies, whole grains and lean proteins in the house.

My workouts haven't been as intense... not sure what is going on... mostly mental I think... staying up too late watching netflix, letting projections get to me, etc.

I have some good leads on Kipper and I believe that something will pan out for sure with the leads I have. She met a dog today and Sunday she meets another. If those don't work out then Megan's mom might be interested in her.

I had a nice chat with my financial advisor about moving some money around, feeling confident about my future (at least for the most part).

I need to remember that the majority of the people that I speak to think that what I am doing is one of the coolest things.  That I am living my life unreasonably, and I love it.

We'll see if I can get back on track with my eating... I have also been eating out a bit more. some of the choices I have made while eating out

Chipolte: rice, black beans, chicken, salsa (tomato, corn, medium)
Sweet Tomatoes: Two plates of salad, muffins, soup, 1/3 sweet potato, chocolate milk
Red Velvet: Veggie panini w/ baked "fries",
Grand Lux: Greek Salad, BBQ Salmon, chicken lettuce wraps (not all on the same day)

Also been trying some other bars from whole foods - snacking a bit more... hmmm...

I guess that is it for now... time to grab a snack, head to the grocery store and then go look for some wood floors... better get busy NOW!



Accountability ~ Day 67 ~ Am I off on my days?

This was supposed to be posted about 5 days ago... I have a few Day 67s and I think that messed me up a bit... sooo not sure which day this was but it is definitely out of order

Wake up: 8:45
9am: Breakfast: Steel Cut oats, blueberries, 4 egg white omelete w/ veggies, green tea, yummm
11am: Snack: Banana, protein bar
1pm: Lunch: Salad w/ chicken, yummm
2:30: Greens food bar, apple
4:30: Salad w/ chicken, 7 whole grains mix (sooo good)
5:45: Shakeology, strawberries, banana (tired)
8:30:

Beachbody: not today

Ducks: Found out Bev is going to buy a bunch of my furniture and stuff :)

Accountability ~ Day 68 low energy today... not sure why

Wake up:7:40
Breakfast: 8:00 Oatmeal Apple Pie :) Green Tea
Snack: fruit, oatmeal cranberry 1/2 bar
Workout: Chest/Shoulders/Tris/Back, Zumba, Abs
Lunch: Fruit, deep dish pizza (home made)
Snack: Raw bar (yumm), vegan chocolate chip cookies (2). Not as good as red velvet, not worth the cheat in my book
Dinner: coconut chicken, green peas.
Cheat: vegan cookie

Ducks: Kipper vet

Beachbody: not today

Accountability ~ Day 67

Wake up: 8:45
Breakfast: 4 eggwhite omelet w/ veggies, green tea
Snack: Orange
Lunch: 1/4 pound turkey meatloaf w/ apples, mushrooms and onions, cup of green peas
Snack: Was still hungry shortly after so had chocolate protein shake, strawberries, cocoa powder and soy milk
Snack: Apple
Dinner 1: 1/2 Spaghetti squash, tomatoes, onions, chicken
Dinner 2: Still hungry Chicken lettuce wraps and wheat bread w/ honey

Accountability ~ Day 67 Prep paid off!!

So last night I planned out some meals to cook - I wanted to try a kale recipe and a spaghetti squash recipe. I also had some turkey burgers and a deep dish pizza I wanted to try (which I turned into turkey meat loaf instead).
After making my list, swung by the grocery store and picked up what I needed... I wasn't planning on cooking last night, but got home and just figured I would get it done - I had the energy after a nice long nap yesterday.

I started with the turkey burger/meatloaf, got that going in the oven and threw in the spaghetti squash. While all that was cooking sauteed the veggies for the rest of the squash dish (peppers, onion, tomatoes) and did the same for the kale soup. Once the squash was done I just had to scoop it out and add the veggies to it, split it up in seperate containers, sealed and bam - two healthy meals ready to go.
Soup was simmering and just about finished. I had a bunch of chicken and decided I wanted to add chicken to both the squash and kale soup so pan fried a breast and a half in coconut oil. While that was cooking I started on the pizza topping - 96% lean ground beef, peppers, onions, tomatoes, mushrooms. I'll make the crust probably saturday and enjoy it after my workout. Later this week I still need to make my favorite oatmeal apple cobbler breakfast - piece of cake to make that- will probably do that when I make the crust of the pizza.

The "point" of all of this is in about 3 hours I made, or at least got a head start on at least 15 lunches or dinners - that is easily about a weeks worth of food - once I finish up the breakfast and pizza and I wouldn't have to cook the rest of the week! I have a fridge full of QUICK healthy options. I don't let the veggies go into the fridge without being chopped, plastic ware is my best friend and so is the freezer! My kitchen was a DISASTER but I filled the dishwasher and wont have to worry about a mess the rest of the week - this doesn't have to be hard!! It will just be different for a bit and then it will turn into the norm.

After the gym yesterday I was hungry and didn't bring my post workout snack, I debated on swinging by Subway - hadn't had it in a while and was craving some bread. I was going to get a veggie sandwich but the almost white iceberg lettuce, lack of cucumbers, spinach and avacado made me turn around and walk out. 8 months ago my sandwich would have been processsed turkey meat, lettuce, tomatoe, mayo and cheese - either on honey oat (good) or white sprinkled with cheddar cheese (most likely), washed down with a soda or high sugar iced tea and two cookies. I decided to drive a bit out of my way and head to Chipolte instead for some farm raised chicken, black beans, and fresh salsas, romaine, and cilantro lime rice - yummm

Anyway...
Here is what I had today:
9:00 Breakfast: Steel cut oats, blueberries, 4 egg white omelet w/ peppers, onions, mushrooms, sprinkle of moz cheese, green tea w/ stevia
12:00 Lunch: 1/2 spaghetti squash w/ onions, peppers, tomatoes, basil, feta and Chocolate Shakeology w/ almond milk
4:30: Kale soup w/ chicken (really good) and some bulger, wheat and orzo
9:30: cashew butter, pistachios and some dried fruit (forgot my snack... boo)
9:30 yoga X!
11:30 nibbles while I cooked

Workout: Legs/Back/Abs/Zumba/Handstand practice

Dinner: Island Pork Tenderloin, cashew butter (cheat)

Accountability Day 65 ~ Days are FLYING BY!!!

Wake up: 7:40!!! And I didn't go back to sleep! But I did stay in bed watching the rest of The Biggest Loser
9:20: Oatmeal Apple Pie, green tea
10:00 Banana
2:00: Tilapia, Kale salad yummmm!! and wheat, bulgur, orzo, green tea
3:45: Shakeology, peanut butter :)
7:00 Cottage Cheese w/ protein powder, oat/cranberry bar
7:45: Great yoga class!!
9:45 Grilled chicken, veggie kabobs, roasted garlic on sourdough bread (cheat) and 1/2 glass of wine (cheat), salad w/ vinegar and mayo dressing (cheat)

Beachbody: Yep, tons of stuff today!!

Ducks: not as much as I should!
